Background

Each country in Latin America has a unique cuisine that is shaped by its history, geography, and culture. The result is an exciting variety of flavors and traditions.

The history of Mexican food is both long and diverse. It is believed that authentic Mexican food may have been derived from the Mayan. Corn tortillas with bean paste were a common food item for these people along with wild game, tropical fruits, and fish. A shift occurred during the time of the Aztec Empire, and although the Mayan food staples were still in use, chili peppers, honey, salt, and chocolate became additional parts of the developing Mexican cuisine.

Mexican cuisine was highly influenced by Spanish colonials. The Spanish introduced new livestock, such as sheep, pigs, and cows to the ever -developing Mexican food tradition. The Spanish brought with them dairy products and garlic as well as many different herbs, types of wheat, and spices. Many outside influences have come together to make Mexican food very diverse from region to region.

It is the original Mexican traditions that continue to prove themselves as great additions to cuisine all over the world. We have Mexican tradition to thank for ingredients such as beans, corn, squash, tomatoes, chocolate, avocado, papaya, guava, vanilla, and of course, chili peppers.

Logo

Sabore's logo was inspired by the Mayan symbol for Corn which is one of the basic ingredients in most of our dishes.

Many of today's typical Mexican dishes are created with the same ingredients that were served to the royalty of Mayan, Toltec, Aztec and other ancient Mexican civilizations. Maize (corn) is one of the world's oldest ingredients, dating back to cultures over 6000 years old. Corn was the main staple of many Latin American civilizations.
